Recipe Information
- Prep Time: 10 minutes
- Cook Time: 30–35 minutes
- Total Time: 40–45 minutes
- Servings: 4
- Difficulty: Easy
- Method: Oven-roasted
- Oven: 425°F (220°C)
Ingredients
- 12–16 oz (340–450 g) chicken or pork Italian sausage, about 4–5 links
- 1 red onion, trimmed and cut into 8 wedges
- 1 yellow onion, trimmed and cut into 8 wedges
- 2 bell peppers, seeded and cut into 1-inch-wide strips
- 3 tbsp extra-virgin olive oil
- 6 cloves garlic, minced
- 2 tbsp fresh rosemary, finely minced
- 1 tsp kosher salt
- ½ tsp freshly ground black pepper
- ½ tsp Italian seasoning, optional
- ¼ tsp red pepper flakes, optional
- 1 tbsp balsamic vinegar, optional, for finishing
Instructions
1. Preheat the Oven
Preheat your oven to 425°F (220°C).
Line a large rimmed baking sheet with parchment paper or lightly grease it with olive oil.
2. Prepare the Vegetables
Place the red onion, yellow onion, and sliced bell peppers on the baking sheet.
Add the minced garlic and rosemary.
Drizzle everything with the olive oil and sprinkle with kosher salt, black pepper, and optional Italian seasoning and red pepper flakes.
Toss thoroughly so the vegetables are evenly coated.
3. Add the Sausage
Nestle the Italian sausage links among the vegetables.
If using very thick sausages, prick them once or twice with a fork—but avoid making lots of holes, as this can allow the juices to escape.
For extra browning, lightly brush the sausage with a little olive oil.
4. Roast
Place the baking sheet in the oven and roast for 25–30 minutes, turning the sausages and tossing the vegetables about halfway through.
Continue cooking until the sausages are deeply browned and the onions and peppers are tender with caramelized edges.
The sausage should reach an internal temperature of 160°F (71°C) for pork sausage or 165°F (74°C) for chicken sausage.
5. Finish
Remove the pan from the oven and let the sausages rest for 5 minutes.
For an extra burst of flavor, drizzle the roasted vegetables with 1 tablespoon balsamic vinegar and toss gently.
Slice the sausages into thick pieces or serve them whole.
Spoon the peppers, onions, and pan juices over the sausage and serve immediately.

🌿 Chef’s Tips
Don’t crowd the pan. Spread the vegetables into a single layer so they roast and caramelize instead of steaming.
Cut the peppers evenly. Similar-sized strips cook at roughly the same rate.
Use a large baking sheet. More surface area means better browning.
Try different sausage flavors. Sweet, mild, hot, fennel, chicken, or turkey Italian sausage all work beautifully.
Add the balsamic at the end. A small amount brightens the rich roasted flavors without overpowering the rosemary and garlic.
Variations
Spicy Sausage & Peppers
Use hot Italian sausage and add ½ teaspoon crushed red pepper flakes.
Garlic Parmesan
After roasting, sprinkle the vegetables with ¼ cup freshly grated Parmesan and return to the oven for 2 minutes.
Mediterranean Style
Add cherry tomatoes and finish with fresh parsley and a squeeze of lemon.
Cheesy Sausage & Peppers
Top everything with shredded mozzarella during the final 3–5 minutes of roasting.
Sheet-Pan Potato Version
Add 1½ pounds baby potatoes, halved, to make this a complete one-pan dinner. Toss the potatoes with the olive oil and roast them for about 10 minutes before adding the remaining ingredients.
Storage
Allow leftovers to cool, then refrigerate in an airtight container for up to 4 days.
Reheating
Reheat in a skillet over medium heat until hot, or place in a 350°F (175°C) oven for about 10–15 minutes.
Microwaving works for quick reheating, although the sausage and vegetables will be softer.
Freezing
Cooked sausage and peppers can be frozen in an airtight freezer-safe container for up to 2 months.
Thaw overnight in the refrigerator and reheat gently in a skillet or oven.
⭐ Final Result
Juicy Italian sausage, sweet caramelized onions, tender bell peppers, fragrant garlic, and fresh rosemary—all roasted together on one pan.
It’s simple, hearty, flavorful, and exactly the kind of easy weeknight dinner you can make without a lot of fuss.
