- Diced red onion
- Sliced jalapeños

Instructions
1. Prepare the Slow Cooker
Lightly grease the inside of a 6-quart slow cooker with cooking spray or a small amount of oil.
Place the chicken breasts in an even layer on the bottom.
2. Season the Chicken
Sprinkle the taco seasoning evenly over the chicken.
Add the kosher salt and black pepper.
Rub or gently spread the seasoning over the chicken so it’s well coated.
3. Add the Chiles and Tomatoes
Pour the diced tomatoes and green chilies over the chicken.
Add the diced green chiles, including their liquid.
Spread everything evenly around the chicken.
4. Slow Cook
Cover the slow cooker with the lid.
Cook on:
- LOW for 5–6 hours, or
- HIGH for 2½–3½ hours
The chicken is ready when it is tender and reaches an internal temperature of 165°F (74°C).
Avoid overcooking, especially if using smaller chicken breasts.
5. Shred the Chicken
Transfer the cooked chicken to a large bowl or leave it in the slow cooker.
Shred it thoroughly with two forks.
Return the shredded chicken to the slow cooker and stir it into the tomato and chile mixture.
6. Add the Queso
Pour the 15 oz salsa con queso into the slow cooker.
Stir thoroughly until the queso coats all of the shredded chicken.
Cover and cook on LOW for another 10–15 minutes, just until the queso is heated through and everything is creamy and well combined.
7. Warm the Tortillas
Warm the street taco tortillas in a dry skillet over medium heat for approximately 20–30 seconds per side.
You can also wrap several tortillas in foil and warm them in a low oven.
Keep the tortillas covered with a clean kitchen towel so they stay soft.
8. Assemble the Tacos
Spoon a generous portion of queso chicken into each warm tortilla.
Top with your favorite toppings.
A combination of fresh cilantro, diced onion, jalapeños, and a squeeze of lime works especially well with the creamy queso filling.
9. Serve
Serve the tacos immediately while the chicken and queso are hot and creamy.
Add extra salsa con queso or a squeeze of fresh lime just before eating.
Chef’s Tips
Don’t Add Too Much Liquid
The canned tomatoes and green chiles provide enough moisture for the chicken to cook. There’s no need to add extra broth or water.
Use Chicken Thighs
Boneless, skinless chicken thighs can be substituted for the breasts. They’ll produce especially tender, juicy shredded chicken.
Shred While Warm
Chicken is easiest to shred while it’s still hot.
Add Queso at the End
Adding the queso after the chicken has cooked keeps it creamy and prevents it from becoming overly thick during the long slow-cooking process.
Don’t Overfill the Tortillas
Street tacos are small, so a few tablespoons of filling per tortilla is usually enough. This makes them easier to fold and eat.
Make-Ahead Instructions
Prepare the chicken mixture according to the recipe and refrigerate it in an airtight container.
When ready to serve, gently reheat it on the stovetop or in the slow cooker on LOW.
Add a splash of milk if the queso has thickened too much.
Warm the tortillas just before serving.
Storage
Store leftover queso chicken in an airtight container in the refrigerator.
Refrigerator: Up to 3–4 days.
Keep the tortillas and fresh toppings separate.
Reheating
Reheat the chicken gently in the microwave, on the stovetop, or in the slow cooker.
If the queso becomes too thick, stir in a small splash of milk and heat gently until creamy again.
Freezing
For the best texture, freeze the shredded chicken before adding the queso.
Thaw overnight in the refrigerator, reheat thoroughly, and stir in fresh queso before serving.
