Recipe Details

  • Prep Time: 10 minutes
  • Chill Time: 2 hours
  • Total Time: 2 hours 10 minutes
  • Servings: 8–10
  • Difficulty: Easy
  • Method: No-Bake

Ingredients

For the Fluff

  • 2 boxes (3.4 oz / 96 g each) instant pistachio pudding mix
  • 1 can (20 oz / 567 g) crushed pineapple in juice, undrained
  • 12 oz whipped topping, thawed
  • ½ cup chopped pecans
  • 1½ cups mini marshmallows
  • 1 cup sweetened shredded coconut

For Topping

  • Extra chopped pecans
  • Maraschino cherries, drained
  • Optional: a little extra whipped topping
  • Optional: shredded coconut

Preparation

1. Combine the Pudding and Pineapple

Add both boxes of instant pistachio pudding mix to a large mixing bowl.

Pour in the entire can of undrained crushed pineapple, including the juice.

Stir thoroughly for about 1 minute, until the pudding mix is completely moistened and the mixture begins to thicken.

Do not drain the pineapple. The juice provides the moisture needed to activate the instant pudding.

2. Fold in the Whipped Topping

Add the thawed whipped topping to the pistachio-pineapple mixture.

Using a large spatula, gently fold until the mixture is smooth and evenly combined.

Avoid vigorous stirring, which can deflate the whipped topping.

3. Add the Mix-Ins

Fold in:

  • Chopped pecans
  • Mini marshmallows
  • Shredded coconut

Continue folding gently until everything is evenly distributed throughout the pistachio mixture.

4. Chill

Cover the bowl tightly with plastic wrap or transfer the fluff to a covered serving dish.

Refrigerate for at least 2 hours.

For the best texture and flavor, chilling for 3–4 hours or overnight is even better.

The marshmallows soften slightly and the flavors have time to blend together.

5. Garnish and Serve

Just before serving, sprinkle the top with extra chopped pecans and shredded coconut.

Arrange maraschino cherries over the top for the classic pistachio-fluff look.

For an extra-pretty presentation, add small dollops of whipped topping between the cherries.

Serve chilled.

Chef’s Tips

  • Keep the pineapple undrained. The juice is essential for hydrating the pudding mix.
  • Thaw whipped topping in the refrigerator rather than at room temperature for the best texture.
  • Fold gently to keep the dessert light and fluffy.
  • Toast the pecans for 5–7 minutes at 350°F (175°C) and cool completely before adding them for extra nutty flavor.
  • Chill before serving. The texture becomes noticeably better after resting in the refrigerator.
  • If preparing for a party, garnish shortly before serving so the cherries and nuts stay attractive.

Variations

🍒 Cherry Pistachio Fluff

Fold in ½–1 cup drained maraschino cherries, chopped into small pieces.

🍊 Tropical Pistachio Fluff

Add 1 cup well-drained mandarin oranges for extra citrusy sweetness.

🥥 Extra Coconut

Increase the shredded coconut to 1½ cups for a stronger tropical flavor.

🍓 Berry Pistachio Fluff

Fold in 1 cup chopped strawberries or raspberries immediately before serving.

🍫 Chocolate Pistachio Fluff

Add ½ cup mini chocolate chips for a pistachio-chocolate combination.

🥜 Nut-Free Version

Simply leave out the pecans. The dessert will still be creamy, fluffy, fruity, and delicious.

Make-Ahead

This is an excellent make-ahead dessert.

Prepare it up to 24 hours ahead, cover tightly, and refrigerate.

Add the decorative toppings shortly before serving for the freshest presentation.

Storage

Store Pistachio Pineapple Fluff in an airtight container in the refrigerator for up to 3 days.

Give it a gentle stir before serving if some moisture has collected on the surface.

Because of the whipped topping, marshmallows, and fruit, freezing is not recommended—the texture can become watery and grainy after thawing.

Serving Suggestions

Serve this chilled fluff as:

  • A holiday dessert
  • A potluck side dish
  • A summer cookout treat
  • A Thanksgiving or Christmas dessert
  • A light after-dinner sweet
  • A brunch or shower dessert

For an elegant presentation, spoon it into individual dessert cups and top each serving with a pecan piece and maraschino cherry.

The Result

Creamy, fluffy, nutty, fruity, and irresistibly sweet, this Pistachio Pineapple Fluff comes together with almost no effort. The pistachio pudding gives it its beautiful color and creamy flavor, while pineapple adds brightness, coconut and pecans provide texture, and marshmallows make every bite soft and fluffy. 🍍💚🥥
