⏱ Recipe Information

Prep Time: 10 minutes
Chill Time: 1–2 hours
Total Time: About 1 hour 10 minutes
Servings: 8–10
Difficulty: Easy
Method: No-Bake

Ingredients

  • 1 package (3.4 oz) instant vanilla pudding mix
    or cheesecake-flavored instant pudding
  • 20 oz crushed pineapple, undrained
  • 8 oz whipped topping, such as Cool Whip, thawed
  • 2 cups mini marshmallows
  • 1 cup sweetened shredded coconut
  • ½ cup chopped walnuts or pecans

Optional Substitutions

Instead of walnuts or pecans, try:

  • Chopped almonds
  • Crushed pretzels
  • Macadamia nuts
  • Cashews

Instructions

1. Combine the Pineapple and Pudding

Add the undrained crushed pineapple to a large mixing bowl.

Sprinkle the instant pudding mix over the pineapple.

Stir thoroughly until the pudding mix is completely incorporated.

The pineapple juice provides the liquid needed to activate the pudding mix, so do not drain the pineapple.

2. Let the Mixture Thicken

Allow the pineapple and pudding mixture to sit for approximately 3–5 minutes.

The pudding will begin to thicken as it absorbs some of the pineapple juice.

3. Fold in the Whipped Topping

Add the thawed whipped topping.

Using a large rubber spatula, gently fold it into the pineapple mixture until smooth and evenly combined.

Avoid vigorous stirring, which can make the mixture lose some of its fluffy texture.

4. Add the Marshmallows

Fold in the mini marshmallows.

Make sure they are distributed evenly throughout the mixture.

5. Add the Coconut

Add the sweetened shredded coconut.

Gently fold until evenly incorporated.

6. Add the Nuts

Fold in the chopped walnuts or pecans.

Reserve a small amount for sprinkling over the top if you’d like a prettier presentation.

7. Chill

Cover the bowl tightly with plastic wrap.

Refrigerate for at least 1–2 hours before serving.

This gives the flavors time to blend and allows the marshmallows to soften slightly.

For the best texture, chill it overnight.

8. Garnish and Serve

Before serving, give the Pineapple Fluff a gentle stir.

Transfer it to a serving bowl and garnish with:

  • Extra shredded coconut
  • Chopped nuts
  • Mini marshmallows
  • Pineapple pieces
  • A few maraschino cherries

Serve chilled.

Chef’s Tips

Don’t Drain the Pineapple

The pineapple juice is essential because it provides the liquid that hydrates the instant pudding mix.

Fold Gently

Keeping the whipped topping airy gives the dessert its signature fluffy texture.

Toast the Coconut

For a deeper, nuttier flavor, lightly toast the coconut in a dry skillet or oven and let it cool completely before adding it.

Chill Overnight

Although the fluff can be served after an hour or two, overnight refrigeration gives the marshmallows and coconut time to soften and the flavors time to develop.

Flavor Variations

Pina Colada Fluff

Add ½ cup chopped maraschino cherries and use toasted coconut for an extra tropical flavor.

Cherry Pineapple Fluff

Fold in ½ cup chopped maraschino cherries.

Tropical Fluff

Add ½ cup diced mango and ½ cup diced mandarin oranges, making sure excess liquid is drained.

Strawberry Pineapple Fluff

Fold in 1 cup chopped fresh strawberries just before chilling.

Pretzel Pineapple Fluff

Replace the nuts with ½ cup crushed pretzels for a sweet-and-salty crunch.

Coconut Cream Fluff

Use cheesecake pudding and add an additional ½ cup coconut for an extra-creamy coconut flavor.

Make-Ahead Instructions

Pineapple Fluff is an excellent make-ahead dessert.

Prepare it up to 1 day before serving, cover tightly, and refrigerate.

If using pretzels, reserve some crushed pretzels for the topping and add them immediately before serving so they remain crunchy.

Storage

Keep Pineapple Fluff refrigerated in an airtight container.

Refrigerator: Best enjoyed within 2–3 days.

The coconut and marshmallows will soften as the dessert sits, but the flavor will remain delicious.

Recipe Summary

This Pineapple Fluff is the ultimate easy no-bake dessert: creamy, fruity, fluffy, chewy, and crunchy all at once.

Sweet pineapple and vanilla pudding create the creamy base, while whipped topping keeps everything light. Mini marshmallows add chewiness, coconut brings tropical flavor, and chopped nuts provide the perfect crunch.

Juicy pineapple + creamy pudding + fluffy topping + coconut + marshmallows = an effortless tropical treat.
