⏱️ Recipe Information

Prep Time: 15 minutes
Chill Time: 20–30 minutes
Bake Time: 15–20 minutes
Total Time: About 1 hour
Yield: 18–24 cookies
Difficulty: Easy

🛒 Ingredients

  • 1 sheet puff pastry, thawed but still cold
  • ½ cup (100 g) granulated sugar
  • 1 teaspoon vanilla sugar or ½ teaspoon ground cinnamon, optional
  • 1 tablespoon melted butter, optional

Instructions

🔥 1. Preheat the Oven

Preheat your oven to 400°F (200°C).

Line a large baking sheet with parchment paper.

Set aside.

🍬 2. Prepare the Sugar

In a small bowl, combine the granulated sugar with the vanilla sugar or ground cinnamon, if using.

Mix well.

Sprinkle about half of the sugar evenly over a clean work surface.

🥐 3. Roll Out the Puff Pastry

Place the thawed puff pastry over the sugared surface.

If necessary, gently roll it into a neat rectangle approximately ⅛ inch (3 mm) thick.

Don’t press too hard or overwork the pastry.

If the puff pastry begins feeling soft or sticky, place it in the refrigerator for a few minutes before continuing.

🧈 4. Add the Optional Butter

If using butter, lightly brush the surface of the pastry with the melted butter.

Use only a thin coating—you don’t need much.

Sprinkle the remaining sugar evenly over the buttered pastry.

Gently roll over the surface with a rolling pin to help the sugar adhere.

🌀 5. Fold the Pastry

Starting from one long side of the rectangle, fold the pastry inward toward the center.

Then fold the opposite long side toward the center.

The two rolled sides should meet in the middle.

Gently press the two sides together without flattening the pastry too much.

You should now have a long pastry log with a distinctive double-roll shape.

❄️ 6. Chill

Wrap the pastry log loosely in plastic wrap.

Place it in the refrigerator for 20–30 minutes, or until firm.

This makes the pastry much easier to slice and helps the palmiers hold their shape while baking.

🔪 7. Slice the Cookies

Place the chilled pastry log on a cutting board.

Using a sharp knife, slice it into pieces approximately ¼ inch (6 mm) thick.

Try to keep the slices uniform so they bake evenly.

❤️ 8. Shape the Palmiers

Place the slices cut-side up on the prepared baking sheet.

Leave approximately 2 inches (5 cm) between each cookie.

Gently shape each piece into a heart-like form if needed.

Don’t flatten the pastry too much—the layers need room to puff.

🔥 9. Bake

Bake for approximately 8–10 minutes, until the bottoms are golden brown and caramelized.

Carefully flip each palmier with a thin spatula.

Return the baking sheet to the oven and bake for another 5–8 minutes, until the second side is golden brown and crisp.

Keep a close eye on them toward the end because the sugar can caramelize very quickly.

🌬️ 10. Cool

Remove the palmiers from the oven.

Allow them to cool on the baking sheet for 3–5 minutes.

Then transfer them to a wire rack.

The caramelized sugar will continue to firm up as the cookies cool.

⭐ Chef’s Tips

Keep the Puff Pastry Cold

Cold puff pastry gives you cleaner layers and helps prevent the cookies from spreading too much.

Don’t Skimp on the Sugar

The sugar creates the signature crisp, caramelized exterior.

Slice Cleanly

Use a sharp knife and avoid sawing back and forth, which can compress the pastry.

Don’t Overcrowd the Pan

The palmiers expand as they bake, so leave plenty of room between them.

Watch Them Carefully

The difference between perfectly caramelized sugar and burnt sugar can be only a minute or two.

Let Them Cool

They become significantly crispier as they cool.

🍫 Easy Variations

Cinnamon Palmiers

Use ground cinnamon in the sugar mixture for a warm, fragrant flavor.

Vanilla Sugar Palmiers

Use vanilla sugar for a delicate vanilla aroma.

Chocolate Palmiers

Spread a very thin layer of chocolate-hazelnut spread over the pastry before folding.

Orange Cinnamon Palmiers

Add 1 teaspoon finely grated orange zest to the sugar along with ½ teaspoon cinnamon.

Nutty Palmiers

Add finely chopped toasted almonds or pecans before folding.

Salted Caramel Palmiers

Add a tiny pinch of flaky sea salt to the sugar.

☕ Serving Suggestions

Serve these crisp palmiers with:

  • Coffee
  • Espresso
  • Cappuccino
  • Black tea
  • Chai
  • Hot chocolate
  • Vanilla ice cream
  • Fresh berries

They’re particularly delicious when served slightly warm alongside coffee.

🧊 Storage

Allow the cookies to cool completely before storing.

Place them in an airtight container and keep at room temperature for 3–4 days.

Avoid refrigerating them because moisture can soften the crisp caramelized layers.

🔥 Re-Crisping

If the palmiers lose some of their crispness, place them in a 325°F (165°C) oven for approximately 5 minutes.

Cool completely before serving.

❄️ Make-Ahead & Freezing

The assembled pastry log can be wrapped tightly and frozen for up to 1 month.

Thaw it in the refrigerator until firm but sliceable, then cut and bake as directed.

Baked palmiers can also be frozen in an airtight container, although their texture is best when freshly baked.

🥐✨ Recipe Summary

These Palmier Cookies are proof that simple ingredients can create something spectacular. A sheet of puff pastry is coated with sugar, folded into the classic palmier shape, sliced, and baked until the sugar becomes golden, crisp, and beautifully caramelized.

Flaky layers + buttery pastry + crunchy caramelized sugar = pure French-inspired cookie perfection. 🥐❤️
