Important Salmon Note
For rolls containing raw salmon, use sushi-grade or otherwise specifically intended-for-raw-consumption salmon from a reputable source. If your salmon is not sold for raw consumption, cook it instead of using it raw.
Instructions
1. Rinse the Sushi Rice
Place the sushi rice in a large bowl.
Cover it with cold water and gently swirl the rice with your fingers.
Drain the cloudy water.
Repeat the rinsing process several times until the water becomes mostly clear.
Drain the rice thoroughly.
This removes excess surface starch and helps create properly textured sushi rice.
2. Cook the Rice
Transfer the rinsed rice to a saucepan or rice cooker.
Add the 2½ cups water.
If using a saucepan, cover with a tight-fitting lid and bring to a boil over medium-high heat.
Once boiling, reduce the heat to very low and cook, covered, for approximately 15 minutes.
Turn off the heat and let the rice stand, still covered, for another 10 minutes.
Do not lift the lid while the rice is steaming.
3. Make the Sushi Vinegar
While the rice cooks, combine the rice vinegar, sugar, and salt in a small saucepan or bowl.
Warm gently or stir until the sugar and salt dissolve completely.
Do not bring the vinegar mixture to a boil.
Set aside to cool slightly.
4. Season the Rice
Transfer the cooked rice to a large shallow bowl or non-metallic dish.
Pour the seasoned rice vinegar over the warm rice.
Using a rice paddle or spatula, gently fold the rice with cutting and lifting motions.
Avoid vigorously stirring or mashing the grains.
The goal is to coat the rice evenly while allowing excess steam to escape.
5. Cool the Rice
Allow the seasoned sushi rice to cool to approximately room temperature.
Do not refrigerate it, as cold rice becomes firm and difficult to roll.
Cover it loosely with a clean, slightly damp kitchen towel while preparing the other ingredients.
6. Prepare the Fillings
While the rice cools, prepare all the fillings.
Cut the salmon into long, thin strips.
Cut the cucumber and carrot into thin strips of similar length.
Slice the avocado into thin pieces.
Slice the crab sticks if using.
Keep the fillings organized so they are easy to reach while assembling the rolls.
7. Prepare the Sushi Mat
Place a bamboo sushi mat on a clean work surface.
For easier cleanup, you can wrap the mat tightly in plastic wrap.
Place one sheet of nori on the mat with the shiny side facing downward and the rough side facing upward.
8. Spread the Rice
Wet your hands with a little water to prevent the rice from sticking.
Take approximately ¾–1 cup sushi rice and gently spread it over the nori.
Leave about 1 inch (2–3 cm) of nori uncovered along the top edge.
Spread the rice in a thin, even layer rather than pressing it down heavily.
9. Add the Fillings
Arrange a small amount of salmon, cucumber, carrot, and avocado in a horizontal line across the lower third of the rice.
Add crab stick and a thin drizzle of mayonnaise if desired.
Be careful not to add too much filling—the roll needs to close easily.
10. Roll the Sushi
Lift the edge of the bamboo mat closest to you.
Use your fingers to hold the fillings in place while rolling the nori over them.
Tuck the filling tightly under the first fold.
Continue rolling forward while applying gentle, even pressure.
Once the roll is complete, press lightly with the mat to help create a firm, compact cylinder.
Place the finished roll seam-side down.
11. Add Sesame Seeds
For an optional sesame coating, sprinkle sesame seeds over the outside of the rice before cutting.
You can also add them directly to the rice before rolling.
12. Slice the Roll
Use a very sharp knife.
Dip the knife blade in water and wipe it lightly with a clean towel.
Cut the sushi roll in half.
Then cut each half into 3–4 pieces, depending on your preferred size.
Wipe and re-wet the knife as needed between cuts.
13. Repeat
Repeat the process with the remaining nori, rice, and fillings.
Keep the rice covered with a damp towel while assembling the remaining rolls so it doesn’t dry out.
14. Serve
Arrange the sushi pieces on a serving plate.
Serve immediately with:
- Soy sauce
- Pickled ginger
- Wasabi
For a beautiful presentation, arrange different fillings on the platter so the colors of the salmon, avocado, cucumber, and carrot are visible.
Chef’s Tips
- Don’t skip rinsing the rice: Clean rice creates a better sushi texture.
- Keep your hands damp: This makes handling sticky sushi rice much easier.
- Don’t overfill the rolls: Less filling produces tighter, cleaner rolls.
- Spread the rice thinly: A thick layer makes the roll difficult to close.
- Use a sharp knife: A dull knife can crush the roll instead of slicing it cleanly.
- Wet the knife between cuts: This prevents rice from sticking to the blade.
- Keep avocado from browning: Slice it just before assembling the rolls.
- Work efficiently: Sushi rice is easiest to handle while it is freshly prepared and at room temperature.
Delicious Variations
California-Style Sushi
Replace the raw salmon with crab sticks and add avocado and cucumber with a little mayonnaise.
Spicy Salmon Sushi
Mix finely chopped sushi-grade salmon with a little mayonnaise and a small amount of hot sauce.
Teriyaki Chicken Sushi
Replace the raw salmon with cooked teriyaki chicken strips.
Vegetable Sushi
Skip the fish and fill the rolls with avocado, cucumber, carrot, bell pepper, and cream cheese.
Cream Cheese Sushi
Add thin strips of cream cheese alongside the salmon and avocado for a rich, creamy variation.
Spicy Crab Rolls
Combine sliced crab sticks with mayonnaise and a little chili sauce before rolling.
Inside-Out Sushi Rolls
For a more decorative restaurant-style roll, place the rice directly on the plastic-wrapped sushi mat, add a sheet of nori on top of the rice, then arrange the fillings and roll.
Sprinkle the outside with sesame seeds before slicing.
Make-Ahead Advice
Sushi is best eaten soon after assembly.
The rice and vegetables can be prepared a few hours ahead, but the rolls themselves are best assembled shortly before serving.
Raw fish should be kept properly refrigerated and handled according to food-safety guidance.
Storage
For the best quality, enjoy sushi immediately after preparing it.
Raw-fish sushi should not be left at room temperature for extended periods.
Store any leftovers promptly in the refrigerator in a tightly covered container, but keep in mind that the rice and nori will become firmer and less pleasant in texture.
