- 1 can (10.5 oz / 298 g) cream of mushroom soup

Optional Additions
- ½ tsp garlic powder
- ½ tsp paprika
- ½ cup sliced mushrooms
- ½ cup frozen peas
- 1 tbsp chopped fresh parsley, for serving
Instructions
1. Prepare the Oven and Baking Dish
Preheat the oven to 350°F (175°C).
Lightly grease a 9 × 13-inch baking dish with cooking spray or a little butter.
2. Prepare the Rice Mixture
Spread the uncooked long-grain white rice evenly across the bottom of the baking dish.
In a large bowl, whisk together the cream of chicken soup, cream of mushroom soup, and chicken broth until smooth.
Stir in about half of the onion soup mix.
Pour the soup mixture evenly over the uncooked rice.
Do not stir excessively after pouring. Keep the rice distributed in an even layer so it cooks evenly.
3. Season the Chicken
Pat the chicken breasts dry with paper towels.
Season both sides lightly with salt and black pepper.
Remember that the canned soups and onion soup mix are already quite salty, so use salt sparingly.
For extra flavor, sprinkle the chicken with garlic powder and paprika if desired.
4. Arrange the Chicken
Place the seasoned chicken breasts directly on top of the rice and soup mixture.
Sprinkle the remaining onion soup mix over the chicken.
If using sliced mushrooms, scatter them around the chicken.
5. Cover Tightly
Cover the entire baking dish very tightly with aluminum foil.
This step is extremely important.
The trapped steam cooks the rice and keeps the chicken tender. If the dish isn’t sealed properly, the rice may remain undercooked and the chicken can dry out.
6. Bake
Place the covered casserole in the preheated oven.
Bake for approximately 1 hour 15 minutes to 1 hour 30 minutes.
Avoid repeatedly opening the oven or lifting the foil during cooking because this allows steam to escape.
7. Check for Doneness
After about 1 hour 15 minutes, carefully remove the foil.
The rice should be tender and creamy, while the chicken should be cooked through.
The thickest part of each chicken breast should reach an internal temperature of 165°F (74°C).
If the rice needs additional time, cover the dish again and bake for another 10–15 minutes.
8. Rest
Remove the casserole from the oven and let it rest, uncovered, for 10 minutes.
This allows the rice to finish absorbing the creamy sauce and makes the casserole easier to serve.
9. Serve
Spoon the creamy rice onto plates and place a chicken breast over each portion.
Garnish with fresh parsley or a little freshly cracked black pepper if desired.
Serve immediately while hot.
Chef’s Tips
Use Long-Grain White Rice
Long-grain white rice works particularly well because it cooks properly in the creamy liquid without becoming excessively sticky.
Avoid instant or quick-cooking rice unless the recipe is specifically adjusted for it.
Don’t Skip the Foil
A tight foil seal is the secret to this recipe. The rice cooks primarily through the steam trapped inside the casserole.
Watch the Salt
Both the soups and onion soup mix contain significant sodium. Season the chicken lightly and taste the finished dish before adding extra salt.
Choose Similar-Sized Chicken Breasts
If your chicken breasts vary greatly in thickness, the smaller pieces may become overcooked before the largest ones reach 165°F.
For very thick breasts, gently pound them to a more even thickness.
Let It Rest
The rice continues absorbing the sauce during the resting period, so don’t worry if it looks slightly loose immediately after coming out of the oven.
Variations
Cheesy Forgotten Chicken
During the final 10 minutes of baking, sprinkle 1 cup shredded cheddar or Monterey Jack cheese over the casserole and return it to the oven uncovered until melted.
Garlic Herb Chicken
Add 1 tsp garlic powder and 1 tsp dried Italian seasoning to the soup mixture.
Finish with fresh parsley.
Mushroom Lover’s Version
Add 1 cup sliced fresh mushrooms around the chicken before covering and baking.
Vegetable Version
Add ½–1 cup frozen peas, carrots, or mixed vegetables to the rice mixture. Make sure the vegetables are distributed evenly.
Creamy Parmesan
Stir ½ cup grated Parmesan cheese into the soup mixture before pouring it over the rice.
Make-Ahead Instructions
For best results, assemble the casserole shortly before baking rather than letting the uncooked rice sit in the liquid for several hours.
You can, however, prepare the soup mixture and season the chicken ahead of time and refrigerate them separately.
Storage
Allow leftovers to cool, then transfer them to an airtight container.
Refrigerate for up to 3–4 days.
Reheating
Reheat individual portions in the microwave until steaming hot.
For larger portions, cover with foil and warm in a 325°F (165°C) oven until heated through.
If the rice has become dry, add a splash of chicken broth before reheating.
Freezing
For best texture, freeze the cooked leftovers rather than the assembled uncooked casserole.
Freeze in airtight containers for up to 2 months.
Thaw overnight in the refrigerator and reheat thoroughly.
What to Serve With Forgotten Chicken
Because this casserole already contains rice and a creamy sauce, pair it with something fresh and simple:
- Steamed green beans
- Roasted broccoli
- Glazed carrots
- Simple green salad
- Roasted asparagus
- Dinner rolls
- Garlic bread
The Final Result
The finished Forgotten Chicken is exactly what an easy comfort-food dinner should be: tender chicken nestled over creamy, savory rice, with rich mushroom and chicken flavors and the unmistakable taste of onion soup mix.
It requires almost no hands-on work—cover it, put it in the oven, and forget about it until dinner is ready.
