Recipe Information
- Prep Time: 10 minutes
- Cook Time: 15 minutes
- Total Time: About 25 minutes
- Servings: 4
- Yield: About 10–12 pancakes
- Difficulty: Easy
- Method: Stovetop
Ingredients
- 1½ cups (190 g) all-purpose flour
- 2 tablespoons (25 g) granulated sugar
- 2 teaspoons baking powder
- ¼ teaspoon salt
- 1¼ cups (300 ml) milk
- 2 large eggs
- 2 tablespoons (28 g) unsalted butter, melted and slightly cooled
- 1 teaspoon vanilla extract
- Butter or neutral oil, for cooking
For Serving
- Butter
- Maple syrup
- Fresh berries
- Sliced bananas
- Whipped cream
- Powdered sugar, optional
Instructions
1. Combine the Dry Ingredients
In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
Make sure the baking powder is evenly distributed throughout the flour.
2. Combine the Wet Ingredients
In a separate bowl, whisk together the milk, eggs, melted butter, and vanilla extract until smooth and well combined.
Make sure the melted butter has cooled slightly before adding it so it doesn’t cook the eggs.
3. Make the Batter
Pour the wet ingredients into the bowl with the dry ingredients.
Using a whisk or rubber spatula, gently mix until just combined.
Do not overmix. A few small lumps in the batter are perfectly fine.
Overmixing develops the gluten in the flour and can make the pancakes chewy instead of light and fluffy.
Let the batter rest for 5–10 minutes before cooking.
4. Heat the Pan
Place a nonstick skillet or griddle over medium-low to medium heat.
Lightly grease it with a little butter or neutral oil.
The pan should be hot enough that a drop of batter begins to sizzle gently, but not so hot that the pancakes brown before the centers cook.
5. Cook the Pancakes
Pour approximately ¼ cup of batter onto the hot skillet for each pancake.
Leave enough space between the pancakes so they are easy to flip.
Cook for about 2–3 minutes, or until bubbles begin forming across the surface and the edges look set.
6. Flip
Carefully slide a spatula underneath the pancake and flip it in one confident motion.
Cook the second side for another 1–2 minutes, until golden brown and cooked through.
Avoid pressing down on the pancakes with your spatula, as this can flatten them.
7. Continue Cooking
Repeat with the remaining batter.
Lightly grease the skillet between batches if needed.
Keep finished pancakes warm on a plate while you cook the remaining batter.
8. Serve
Stack the warm pancakes on a serving plate.
Top with a pat of butter and a generous drizzle of maple syrup.
Add fresh berries, sliced bananas, whipped cream, or powdered sugar for an extra-special breakfast.
Chef’s Tips
- Don’t overmix the batter: Small lumps are better than a completely smooth batter.
- Let the batter rest: Even 5 minutes gives the flour time to hydrate and helps produce softer pancakes.
- Use fresh baking powder: Old baking powder may not provide enough lift.
- Don’t make the pan too hot: Medium or medium-low heat gives the centers time to cook without burning the outside.
- Wait for bubbles: The first side is ready to flip when bubbles appear and the edges look set.
- Don’t press the pancakes: This pushes out the air that makes them fluffy.
- Use a consistent scoop: A ¼-cup measure creates evenly sized pancakes that cook at the same rate.
Delicious Variations
Blueberry Pancakes
Sprinkle fresh or frozen blueberries over each pancake immediately after pouring the batter onto the skillet.
Chocolate Chip Pancakes
Add ½ cup (85 g) mini chocolate chips to the batter or sprinkle them onto each pancake while cooking.
Banana Pancakes
Mash 1 ripe banana and gently fold it into the batter. Add a pinch of cinnamon for extra warmth.
Cinnamon Sugar Pancakes
Add ½ teaspoon ground cinnamon to the dry ingredients and sprinkle the finished pancakes with cinnamon sugar.
Lemon Berry Pancakes
Add 1 teaspoon finely grated lemon zest to the batter and serve with fresh berries.
Extra-Vanilla Pancakes
Increase the vanilla extract to 1½ teaspoons for a stronger vanilla flavor.
Make-Ahead Instructions
The batter is best cooked fresh, but you can prepare the dry ingredients ahead of time and store them in an airtight container.
For busy mornings, cook the pancakes completely and refrigerate them in an airtight container.
Reheat gently in a toaster, skillet, or microwave.
Freezing Instructions
Allow the cooked pancakes to cool completely.
Place them in a single layer on a baking sheet and freeze until firm.
Transfer to a freezer-safe bag or container, placing parchment paper between layers if desired.
Freeze for up to 2 months.
Reheat directly from frozen in a toaster, oven, or microwave.
