These Crispy Cheese Balls are the ultimate crowd-pleasing appetizer—golden and crunchy on the outside with an insanely gooey, stretchy cheese pull on the inside.

The secret to keeping the cheese from blowing out in the hot oil comes down to two things: using mashed potatoes and cornstarch to build a sturdy base, and chilling the rolled balls thoroughly before frying.

What You’ll Need

For the Cheese & Potato Base:

  • 250 g mozzarella cheese (shredded or finely grated for that ultimate cheese pull)
  • 100 g cheddar cheese (grated for a bold, sharp flavor)
  • 2 medium potatoes (boiled, peeled, and thoroughly mashed)
  • 2 tablespoons cornstarch
  • 2 tablespoons finely chopped fresh parsley
  • ½ teaspoon garlic powder
  • ½ teaspoon black pepper
  • ¼ teaspoon salt

For the Breading Station:

  • 60 g (½ cup) all-purpose flour
  • 2 large eggs, well beaten
  • 100 g (1 cup) breadcrumbs (fine or panko)
  • Neutral oil for deep frying (vegetable, canola, or sunflower oil)

Step-by-Step Instructions

1. Prep the Potato Base

Boil your 2 medium potatoes until fork-tender. Peel them while still warm and mash them until completely smooth—you don’t want any hard lumps in the dough. Let the mashed potatoes cool down to room temperature so they don’t prematurely melt the cheese.

2. Mix the Cheese Dough

In a large bowl, combine the cooled mashed potatoes, shredded mozzarella, grated cheddar, 2 tbsp cornstarch, 2 tbsp fresh parsley, ½ tsp garlic powder, ½ tsp black pepper, and ¼ tsp salt.

Work everything together using your hands or a rigid spatula until a smooth, pliable cheese dough forms. The cornstarch and potato starch will bind the cheeses together so they hold their shape.

3. Roll into Balls

Scoop out small tablespoon-sized portions of the mixture and roll them firmly between your palms into uniform, smooth 1-inch balls. Make sure there are no cracks on the surface.

4. The Standard Breading Station (Flour, Egg, Breadcrumb)

Set up three shallow bowls in a row:

  1. Bowl 1: All-purpose flour
  2. Bowl 2: Beaten eggs
  3. Bowl 3: Breadcrumbs

Roll each cheese ball in the flour (shake off the excess), dip it completely into the beaten egg, and then roll it in the breadcrumbs until fully coated.

5. Chill Before Frying (Mandatory Step!)

Arrange the breaded cheese balls on a plate or baking sheet. Place them in the refrigerator for at least 30 minutes (or the freezer for 15 minutes).

Why this matters: Chilling firms up the cheese and potato starches. If you drop warm cheese balls into hot oil, the cheese will melt and expand too quickly, bursting through the crust before it turns golden.

6. Fry to Golden Perfection

Fill a deep pot or heavy skillet with at least 2 inches of neutral frying oil. Heat over medium-high heat until it reaches 350°F (175°C).
