Prep Time: 20 minutes
Cook Time: 15–20 minutes
Total Time: About 40 minutes
Servings: 30–36 rangoons
Difficulty: Easy
Method: Deep-Fried
Ingredients
Crab Rangoon Filling
- 1 package square wonton wrappers
- 8 oz imitation crab, finely chopped
- 2 packages (8 oz each) cream cheese, softened
- 5 green onions, thinly sliced
- 1 teaspoon Worcestershire sauce
For Frying
- Vegetable oil, enough for deep frying
Optional Seasonings
- ½ teaspoon garlic powder
- ¼ teaspoon black pepper
- ½ teaspoon soy sauce
- 1 teaspoon sesame oil
For Serving
- Sweet chili sauce
- Soy sauce
- Duck sauce
- Spicy mayo
Instructions
1. Soften the Cream Cheese
Place the cream cheese in a large mixing bowl.
Allow it to soften at room temperature for approximately 20–30 minutes if necessary.
Softened cream cheese makes the filling much easier to mix and prevents lumps.
2. Prepare the Crab
Finely chop the imitation crab into small pieces.
You want the crab pieces small enough to distribute evenly throughout the creamy filling.
3. Make the Filling
Add the chopped imitation crab and sliced green onions to the softened cream cheese.
Add the Worcestershire sauce.
If using the optional seasonings, add them now.
Mix thoroughly until everything is evenly combined.
The finished mixture should be creamy, thick, and easy to scoop.
4. Prepare the Wonton Wrappers
Place the wonton wrappers on a clean work surface.
Keep the unused wrappers covered with a slightly damp kitchen towel while working so they don’t dry out.
5. Fill the Wontons
Place approximately 1 tablespoon of filling in the center of each wrapper.
Do not overfill, as too much filling can make the wontons difficult to seal.
6. Seal the Rangoons
Dip your finger in water and lightly moisten the edges of the wonton wrapper.
Fold the wrapper over the filling to form a triangle.
Press firmly along the edges to seal.
For a traditional purse shape, bring the corners together and press them firmly.
Make sure there are no open gaps where the filling could escape during frying.
7. Repeat
Continue filling and sealing the wonton wrappers until all the filling has been used.
Arrange the finished rangoons on a parchment-lined tray and keep them covered while you heat the oil.
8. Heat the Oil
Pour enough vegetable oil into a deep, heavy-bottomed pot to allow the rangoons to float freely.
Heat the oil to approximately 350°F (175°C).
Use a thermometer for the most consistent results.
9. Fry the Crab Rangoons
Carefully place several rangoons into the hot oil.
Do not overcrowd the pot.
Fry for approximately 2–3 minutes, turning occasionally, until the wrappers are crisp and golden brown.
The exact cooking time will depend on the size of your rangoons and the temperature of the oil.
10. Drain
Remove the cooked rangoons with a slotted spoon or spider strainer.
Transfer them to a wire rack or paper towel-lined plate to drain excess oil.
Allow them to cool for a few minutes before serving.
11. Serve
Arrange the crispy Crab Rangoons on a serving platter.
Serve warm with sweet chili sauce or your favorite dipping sauce.
Chef’s Tips
Don’t Overfill
A small amount of filling is enough. Overfilled rangoons are more likely to split open during frying.
Seal the Edges Well
Moisten the wrapper edges lightly with water and press firmly to create a tight seal.
Keep the Wrappers Covered
Wonton wrappers dry out quickly. Keep them under a damp—not wet—kitchen towel while assembling.
Maintain the Oil Temperature
Oil that’s too cool can make the rangoons greasy, while oil that’s too hot can burn the wrappers before the filling is heated through.
Fry in Small Batches
Adding too many rangoons at once lowers the oil temperature and prevents even browning.
Air Fryer Method
For a lighter version:
- Preheat the air fryer to 375°F (190°C).
- Lightly brush or spray the assembled rangoons with vegetable oil.
- Arrange them in a single layer without overlapping.
- Air fry for approximately 6–9 minutes, turning halfway through.
- Cook until crisp and golden.
Cooking times vary between air fryers, so keep a close eye on them toward the end.
Oven-Baked Method
- Preheat the oven to 400°F (200°C).
- Arrange the rangoons on a parchment-lined baking sheet.
- Lightly brush or spray them with oil.
- Bake for approximately 10–14 minutes, turning halfway through.
- Remove when golden and crisp.
Flavor Variations
Spicy Crab Rangoon
Add ½–1 teaspoon sriracha or a pinch of red pepper flakes to the filling.
Garlic Crab Rangoon
Add ½ teaspoon garlic powder or 1 small minced garlic clove.
Creamy Shrimp Rangoon
Replace some or all of the imitation crab with finely chopped cooked shrimp.
Extra Cheesy Rangoon
Add ¼ cup shredded mozzarella or Monterey Jack cheese to the filling.
Green Onion & Sesame
Add a little toasted sesame oil and finish the filling with sesame seeds.
Best Dipping Sauces
Crab Rangoons pair especially well with:
- Sweet chili sauce
- Soy sauce
- Duck sauce
- Spicy mayo
- Sriracha mayo
- Garlic chili sauce
- Sweet-and-sour sauce
Make-Ahead Instructions
Assemble the uncooked rangoons and place them in a single layer on a parchment-lined tray.
Cover tightly and refrigerate for up to 1 day before frying.
You can also freeze assembled uncooked rangoons for longer storage.

Storage
Store leftover cooked rangoons in an airtight container.
Refrigerator: Up to 3 days.
Reheat in an air fryer or oven to restore their crisp texture.
Avoid microwaving if possible, as it can make the wrappers soft.
Freezing Instructions
Place uncooked assembled rangoons on a parchment-lined tray without touching.
Freeze until solid, then transfer them to a freezer-safe bag or container.
Freezer: Up to 2 months.
Fry directly from frozen, carefully adjusting the cooking time.
