Ingredients
- 1 lb ground beef
- 1 can (10 oz) RO*TEL Original diced tomatoes and green chilies, undrained
- 16 oz Velveeta cheese, cut into small cubes

- ½ teaspoon onion powder
- ¼ teaspoon smoked paprika
- 2 tablespoons chopped jalapeños, for extra heat
- 2 tablespoons chopped fresh cilantro, for garnish
Directions
1. Brown the ground beef
Place a large skillet over medium heat.
Add the ground beef and cook for approximately 6–8 minutes, breaking it apart with a wooden spoon or spatula as it cooks.
Continue cooking until the beef is completely browned.
2. Drain the beef
If there is a significant amount of excess grease in the skillet, carefully drain it.
Return the beef to the skillet and reduce the heat to low.
3. Add the cheese and RO*TEL
Add the cubed Velveeta and the entire can of undrained RO*TEL tomatoes and green chilies.
The liquid from the RO*TEL helps loosen the cheese and creates the creamy dip consistency.
4. Melt everything together
Stir continuously or very frequently over low heat for approximately 5–7 minutes, until the Velveeta is completely melted and the mixture is smooth and creamy.
If using the optional garlic powder, onion powder, or smoked paprika, stir them in at this stage.
Do not boil the dip, as excessive heat can cause the cheese mixture to become greasy or separate.
5. Adjust the consistency
If the dip is thicker than you prefer, stir in 1–2 tablespoons of milk at a time until it reaches your desired consistency.
For a thicker dip, simply continue heating gently for another minute or two.
6. Serve
Transfer the hot Rotel Dip to a serving bowl or keep it warm in a small slow cooker.

Slow Cooker Method

- Brown and drain the ground beef.
