🛒 Ingredients
🥐 Choux Pastry
- ½ cup (120 ml) water
- ½ cup (120 ml) whole milk
- 8 tablespoons (113 g) unsalted butter
- 1 tablespoon granulated sugar
- ½ teaspoon salt
- 1 cup (125 g) all-purpose flour
- 4 large eggs, at room temperature
🤍 Whipped Cream Filling
- 500 ml dairy whipping cream, very cold
- ¼ cup (30 g) powdered sugar
- 1 teaspoon vanilla extract
✨ For Finishing
- Powdered sugar, for dusting
Instructions
🧈 1. Prepare the Choux Dough
Preheat your oven to 400°F (200°C).
Line two baking sheets with parchment paper.
Place the water, milk, butter, sugar, and salt into a medium saucepan.
Heat over medium heat, stirring occasionally, until the butter has completely melted and the mixture comes to a gentle boil.
🌾 2. Add the Flour
Remove the saucepan from the heat.
Immediately add all the flour at once.
Using a wooden spoon or sturdy spatula, stir vigorously until the flour is completely incorporated.
The mixture will initially look lumpy but will quickly come together.
🔥 3. Cook the Dough
Return the saucepan to medium-low heat.
Stir continuously for approximately 1–2 minutes.
The dough should form a smooth ball and pull away from the sides of the pan.
You may notice a thin film forming on the bottom of the saucepan.
This is a good indication that enough moisture has evaporated.
🌡️ 4. Cool Slightly
Transfer the dough to a mixing bowl.
Let it cool for approximately 5 minutes.
You want it warm, but not hot enough to cook the eggs when they’re added.
🥚 5. Add the Eggs
Add the eggs one at a time, mixing thoroughly after each addition.
At first, the dough may look separated or slippery.
Keep mixing—it will come back together.
The finished choux dough should be:
- Smooth
- Glossy
- Thick
- Soft enough to pipe
- Able to hold its shape
Dough Test
Lift some dough with your spatula.
It should fall back into the bowl in a thick ribbon, forming a slight V shape at the end.
If the dough is already smooth and pipeable before all four eggs are incorporated, you may not need every drop of the final egg.
🥐 6. Pipe the Cream Puffs
Transfer the choux dough into a piping bag fitted with a large round tip.
Pipe mounds approximately 1½–2 inches (4–5 cm) wide onto the prepared baking sheets.
Leave at least 2 inches (5 cm) between each mound.
If small peaks remain on top, lightly dampen your fingertip and gently smooth them down.
💧 7. Create Steam
Lightly mist the inside of the oven with water immediately before placing the cream puffs inside, or place a small oven-safe dish of hot water in the oven during the initial baking period.
The steam helps the choux pastry expand.
Avoid opening the oven door during the first part of baking.
🔥 8. Bake
Bake at 400°F (200°C) for approximately 15 minutes.
Then reduce the temperature to 350°F (175°C) and continue baking for another 10–15 minutes, until the shells are:
- Deep golden brown
- Firm to the touch
- Well puffed
- Dry-looking
Do not open the oven door too early, as the shells can collapse.
🌬️ 9. Dry the Shells
Turn off the oven.
Use a wooden spoon to prop the oven door open slightly.
Leave the cream puffs inside for approximately 10 minutes.
This helps excess moisture escape and reduces the chance of the shells collapsing.
Transfer them to a wire rack and allow them to cool completely.
🤍 10. Make the Whipped Cream
Pour the cold dairy cream into a large chilled mixing bowl.
Add the powdered sugar and vanilla.
Beat with an electric mixer on medium-high speed until the cream forms firm peaks.
Don’t overbeat, or the cream can become grainy and eventually turn into butter.
🔪 11. Fill the Cream Puffs
Once the pastry shells are completely cool, cut them horizontally in half using a serrated knife.
Alternatively, make a small hole in the bottom of each shell.
Transfer the whipped cream into a piping bag.
Pipe a generous amount of cream into each pastry shell.
Replace the tops.
✨ 12. Finish
Arrange the cream puffs on a serving platter.
Dust generously with powdered sugar.
For an elegant presentation, you can also drizzle them with melted chocolate or add fresh berries alongside.
⭐ Chef’s Tips
Measure the Flour Correctly
Too much flour can create dense pastry. For the most consistent results, weigh the flour if possible.
Cook the Flour Properly
The brief stovetop cooking step is essential. It removes excess moisture and prepares the dough to absorb the eggs.
Add Eggs Slowly
Don’t add all four eggs at once. The dough needs time to absorb each addition.
Don’t Underbake
Pale cream puffs are more likely to collapse. They should be a rich golden brown and feel relatively light and dry.
Don’t Open the Oven Early
The sudden temperature change can cause the delicate shells to deflate.
Cool Completely Before Filling
Warm pastry will melt the whipped cream.
Fill Shortly Before Serving
Filled cream puffs are best when the shells retain some crispness.
🍫 Delicious Variations
Chocolate Cream Puffs
Add cocoa powder to the whipped cream or drizzle the finished pastries with melted chocolate.
Strawberry Cream Puffs
Fold finely chopped strawberries into the whipped cream or serve fresh strawberries alongside.
Vanilla Custard
Replace the whipped cream with homemade vanilla pastry cream for a classic pâtisserie-style cream puff.
Coffee Cream
Add 1–2 teaspoons instant espresso powder dissolved in a tiny amount of cream before whipping.
Chocolate-Dipped
Dip the tops in melted dark or milk chocolate and allow them to set before assembling.
🧊 Storage
Store unfilled choux shells in an airtight container at room temperature for up to 2 days.
If the shells soften, place them in a 300°F (150°C) oven for approximately 5–8 minutes, then cool completely before filling.
Store filled cream puffs in the refrigerator and enjoy within 1–2 days.
❄️ Freezing
Unfilled baked shells freeze particularly well.
Place completely cooled shells in a freezer-safe container or bag and freeze for up to 2 months.
Thaw at room temperature, then crisp them in a 300°F (150°C) oven for several minutes before cooling and filling.
