Recipe Information

  • Prep Time: 25 minutes
  • Freezing Time: 6–8 hours
  • Total Time: About 6–8 hours 25 minutes
  • Yield: 8–10 popsicles
  • Difficulty: Easy
  • Method: No-churn frozen dessert

Ingredients

For the Cream Base

  • 1 cup (240 ml) heavy whipping cream, very cold
  • ½ cup (120 ml) evaporated milk
  • ½ cup (150 g) sweetened condensed milk
  • 1 teaspoon vanilla extract

For the Strawberry Layer

  • 1½ cups (225 g) fresh strawberries, hulled
  • 2 tablespoons granulated sugar
  • 1 teaspoon fresh lemon juice

For the Chocolate Layer

  • 3 tablespoons (15–18 g) unsweetened cocoa powder
  • 2 tablespoons (30 ml) evaporated milk
  • 1 tablespoon sweetened condensed milk
  • ½ teaspoon vanilla extract

Optional Garnish

  • Mini chocolate chips
  • Finely chopped strawberries
  • Chocolate shavings

Instructions

1. Prepare the Strawberry Mixture

Hull the strawberries and place them in a blender or food processor.

Add the sugar and lemon juice.

Blend until smooth.

For a completely smooth popsicle, strain the strawberry purée through a fine-mesh sieve to remove the seeds.

For a little texture, leave the purée unstrained.

Set aside.

2. Whip the Cream

Pour the cold heavy whipping cream into a large chilled mixing bowl.

Using a hand mixer or stand mixer, whip on medium-high speed until soft to medium-stiff peaks form.

Be careful not to overwhip.

3. Make the Vanilla Cream Base

In a separate bowl, whisk together the evaporated milk, sweetened condensed milk, and vanilla extract.

Gently fold this mixture into the whipped cream using a rubber spatula.

Fold just until smooth and evenly combined.

The mixture should remain light and fluffy.

4. Make the Chocolate Mixture

In a small bowl, whisk together the cocoa powder, evaporated milk, sweetened condensed milk, and vanilla extract.

Mix until completely smooth.

The chocolate mixture should be thick but spoonable.

If it is too thick, add another teaspoon of evaporated milk.

5. Create the Layers

Set out your popsicle molds.

Add a small spoonful of vanilla cream to each mold.

Follow with a thin layer of strawberry purée.

Add another layer of vanilla cream.

Then add a little chocolate mixture.

Continue alternating the layers until the molds are almost full.

Leave approximately ½ inch (1 cm) of space at the top to allow for expansion during freezing.

6. Create a Swirled Effect

For a beautiful marbled appearance, insert a wooden skewer or thin spoon handle into each mold.

Gently swirl the layers once or twice.

Do not over-swirl, or the colors will completely blend together.

7. Insert the Sticks

Place the popsicle sticks into the center of each mold.

Make sure they are straight and positioned deeply enough to remain secure once frozen.

8. Freeze

Place the molds upright in the freezer.

Freeze for at least 6–8 hours, preferably overnight, until completely firm.

Avoid opening the freezer repeatedly during the first several hours.

9. Release the Popsicles

When ready to serve, remove the popsicles from the freezer.

Run the outside of each mold under warm water for 5–10 seconds.

Do not use hot water, as this can melt the popsicle too quickly.

Gently pull the stick upward until the popsicle releases.

10. Garnish and Serve

Serve immediately.

For an extra-special finish, drizzle with melted chocolate and sprinkle with mini chocolate chips, chopped strawberries, or chocolate shavings.

Chef’s Tips

  • Keep the cream very cold: Cold cream whips more easily and gives the popsicles a creamy texture.
  • Don’t overwhip the cream: Stop as soon as soft or medium-stiff peaks form.
  • Don’t overfill the molds: Frozen mixtures expand slightly.
  • Swirl gently: A couple of passes are enough to create beautiful layers.
  • Use ripe strawberries: Naturally sweet, ripe berries provide the best flavor.
  • Strain the strawberry purée: This creates a smoother, more elegant texture.
  • Freeze thoroughly: The popsicles need to be completely firm before unmolding.

Delicious Variations

White Chocolate Strawberry Popsicles

Replace the cocoa mixture with 75 g melted white chocolate, cooled slightly before using.

Chocolate Strawberry Cheesecake Popsicles

Add 60 g softened cream cheese to the vanilla base and blend until smooth before folding into the whipped cream.

Double Chocolate Version

Add a few tablespoons of mini chocolate chips to the chocolate layer.

Fresh Strawberry Popsicles

Add finely diced fresh strawberries to the strawberry purée for little pieces of fruit throughout.

Berry Swirl Popsicles

Replace part of the strawberries with raspberries or blueberries for a mixed-berry variation.

Mocha Chocolate Popsicles

Add ½ teaspoon instant espresso powder to the chocolate mixture for a deeper chocolate-coffee flavor.

Make-Ahead Instructions

These popsicles are perfect for making ahead.

Prepare them up to 1 week in advance and keep them tightly covered in the freezer.

For the best texture, store them in a freezer-safe container or wrap individually once fully frozen.

Storage

Keep the popsicles frozen until ready to serve.

For the best quality, enjoy within 1–2 weeks.

Avoid repeatedly thawing and refreezing, as this can create ice crystals and affect the creamy texture.
