Instructions
1. Prepare the Oven & Pan

Grease and line an 8-inch round cake pan with parchment paper.
Lightly grease the parchment as well.
🌰 Prepare the Dry Ingredients
2. Combine the Flour Mixture
In a medium bowl, whisk together:
- All-purpose flour
- Almond flour
- Baking powder
- Baking soda
- Salt
Set aside.
🍯 Make the Cake Batter
3. Cream the Butter & Sugar
In a large mixing bowl, beat the softened butter and granulated sugar for 2–3 minutes, until light and creamy.
4. Add the Honey
Pour in the honey and beat until well combined.
Scrape down the sides of the bowl as needed.
5. Add the Eggs
Add the eggs one at a time, beating well after each addition.
Add the vanilla and almond extracts.
Mix just until combined.
6. Add the Dry Ingredients & Buttermilk
Add the flour mixture in three additions, alternating with the buttermilk.
Begin and end with the dry ingredients:
Flour → buttermilk → flour → buttermilk → flour
Mix on low speed just until the batter comes together.
Do not overmix.
🍰 Bake the Cake
7. Fill the Pan
Pour the batter into the prepared cake pan.
Smooth the top with a spatula.
Scatter the sliced almonds evenly over the surface.
8. Bake
Bake for approximately 35–40 minutes, or until:
- The top is golden brown.
- The center springs back lightly when touched.
- A toothpick inserted into the center comes out clean or with a few moist crumbs.
If the top is browning too quickly, loosely cover it with foil during the final 10 minutes.
❄️ Cool
9. Let the Cake Rest
Allow the cake to cool in the pan for 10–15 minutes.
Carefully remove it from the pan and transfer it to a wire rack.
Allow it to cool completely before glazing.
🍯 Add the Honey Glaze
10. Make the Glaze
Mix the honey, warm water, and almond extract in a small bowl.
Brush or drizzle the glaze over the cooled cake.
The glaze adds a lovely shine and gives the cake an extra hit of honey flavor.
✨ Finish & Serve
Slice the cake into wedges.
For an elegant finish, sprinkle with:
- Extra toasted almonds
- A light dusting of powdered sugar
- Orange or lemon zest
Serve with tea, coffee, whipped cream, or a spoonful of Greek yogurt.
⭐ Chef’s Tips
Don’t Overbake
Honey helps keep the cake moist, but overbaking can still dry it out. Start checking around 33–35 minutes.
Use Good-Quality Honey
A mild floral honey works beautifully without overpowering the almond flavor.
Toast the Almonds
For a deeper nutty flavor, lightly toast the sliced almonds before sprinkling them over the cake.
Room-Temperature Ingredients
Room-temperature eggs, butter, and buttermilk blend more evenly and give the cake a finer crumb.
Let It Cool Before Glazing
A very hot cake will absorb the glaze too quickly. Letting it cool first gives you a beautiful glossy finish.
🌰 Delicious Variations
Lemon Almond Honey Cake
Add 1 tablespoon finely grated lemon zest to the batter.
Orange Honey Cake
Add 1 tablespoon orange zest and replace 1 tablespoon of the buttermilk with fresh orange juice.
Cardamom Almond Cake
Add ½ teaspoon ground cardamom for a warm, fragrant flavor.
Honey Pecan Cake
Replace the sliced almonds with chopped toasted pecans.
Extra Almond
Add another ¼ teaspoon almond extract for a stronger almond aroma.
Storage
Store the cooled cake in an airtight container.
Room temperature: Up to 3 days
Refrigerator: Up to 5 days
If refrigerated, let slices sit at room temperature for about 20 minutes before serving.
Freezing
Wrap the completely cooled cake tightly in plastic wrap and then foil.
Freeze for up to 3 months.
Thaw overnight in the refrigerator or for several hours at room temperature.
Add the honey glaze after thawing for the freshest finish.
