Ingredients

🍫 Chocolate Sheet Cake

  • 1 cup (226 g) unsalted butter
  • 1 cup (240 ml) water
  • ¼ cup (25 g) unsweetened cocoa powder
  • 2 cups (250 g) all-purpose flour
  • 2 cups (400 g) granulated sugar
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • ½ cup buttermilk

🐢 Turtle Topping

  • ½ cup (113 g) unsalted butter
  • ¼ cup (25 g) unsweetened cocoa powder
  • ¼ cup milk
  • 1 teaspoon vanilla extract
  • 3½ cups (420 g) powdered sugar
  • 1 cup chopped pecans, toasted
  • ½ cup caramel sauce, plus more for drizzling
  • Pinch of salt

Instructions

1. Prepare the Pan

Preheat your oven to 350°F (175°C).

Grease a 10 × 15-inch jelly-roll pan or rimmed sheet pan.

For easier removal, line the bottom with parchment paper.

🍫 Make the Chocolate Cake

2. Heat the Butter, Water & Cocoa

Place the butter, water, and cocoa powder in a medium saucepan.

Heat over medium heat, stirring occasionally, until the butter melts and the mixture is smooth.

Bring it just to a gentle simmer, then remove from the heat.

3. Combine the Dry Ingredients

In a large bowl, whisk together:

  • Flour
  • Sugar
  • Baking soda
  • Salt

Make sure everything is evenly distributed.

4. Add the Chocolate Mixture

Slowly pour the hot butter-and-cocoa mixture into the dry ingredients.

Whisk until mostly combined.

5. Add the Eggs & Buttermilk

Add the eggs, vanilla, and buttermilk.

Whisk just until the batter becomes smooth.

Don’t overmix.

The batter will be fairly thin—this is normal for a Texas-style sheet cake.

🎂 Bake

6. Pour Into the Pan

Pour the batter into the prepared sheet pan.

Spread it evenly into the corners.

7. Bake

Bake for approximately 20–25 minutes, or until the center springs back lightly and a toothpick comes out with a few moist crumbs.

Don’t overbake—the cake should remain soft and fudgy.

🐢 Make the Turtle Frosting

8. Melt the Butter & Cocoa

While the cake is baking, place the butter, cocoa powder, and milk in a saucepan.

Heat over medium heat, stirring until the butter melts and the mixture is smooth.

Remove from the heat.

9. Add Powdered Sugar

Gradually whisk in the powdered sugar.

Add the vanilla and pinch of salt.

Whisk until smooth and glossy.

If the frosting becomes too thick, add another splash of milk.

🍫 Finish the Cake

10. Frost While Warm

Remove the cake from the oven.

Let it stand for 5 minutes, then spread the warm chocolate frosting over the warm cake.

Working while the cake is warm allows the frosting to settle beautifully into the surface.

11. Add the Turtle Toppings

Immediately sprinkle the chopped toasted pecans over the frosting.

Drizzle the caramel sauce generously over the top.

For an especially decadent finish, add another thin layer of caramel in a zigzag pattern.

❄️ Let It Set

12. Cool & Slice

Allow the cake to cool for at least 30 minutes before slicing.

For cleaner squares, refrigerate for approximately 30–45 minutes after the topping has set.

Cut into squares and serve.

⭐ Chef’s Tips

Toast the Pecans

Toast the pecans in a dry skillet over medium-low heat for 3–5 minutes, stirring frequently. Let them cool before adding them to the cake.

Frost While Warm

Texas sheet cakes are traditionally frosted while still warm. This helps the frosting spread easily and creates that signature soft chocolate topping.

Don’t Overbake

The cake should be moist and tender. Start checking around 18–20 minutes.

Use Real Buttermilk

Buttermilk adds tenderness and balances the richness of the chocolate.

Make It Extra Turtle

Don’t be shy with the caramel and pecans. The combination of chocolate + caramel + pecans is what gives this cake its turtle character.

🍯 Delicious Variations

Extra Caramel

Add ½ cup caramel sauce to the frosting before spreading it over the cake.

Chocolate Turtle Cake

Sprinkle ½ cup chocolate chips over the warm frosting before adding the pecans.

Salted Caramel Turtle Cake

Finish with flaky sea salt for a sweet-and-salty contrast.

Walnut Version

Swap the pecans for toasted walnuts.

Coconut Turtle Cake

Add ½ cup toasted shredded coconut with the pecans.

Storage

Store the cake tightly covered at room temperature for up to 3 days.

For longer storage, refrigerate for up to 5 days.

Allow refrigerated slices to sit at room temperature for about 15 minutes before serving.

Freezing

Cut the cooled cake into individual squares.

Wrap each piece tightly in plastic wrap and place in a freezer-safe container.

Freeze for up to 3 months.

Thaw overnight in the refrigerator or for a few hours at room temperature.

🍫🐢 Recipe Summary

This Texas Turtle Sheet Cake is everything a chocolate dessert should be: rich, fudgy, buttery, caramel-loaded, and covered in crunchy toasted pecans.

It’s quick enough for a casual dessert but impressive enough for a party.

Chocolate + caramel + pecans = pure turtle perfection.
