- ¾ cup (150 g) granulated sugar
- ½ cup (100 g) packed light brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1¾ cups (220 g) all-purpose flour
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
🍯 Honey Glaze
- ¼ cup (85 g) honey
- 1 tablespoon water
- ½ teaspoon vanilla extract
- Pinch of cinnamon
Optional Garnish

Instructions
1. Toast the Walnuts
Preheat your oven to 350°F (175°C).
Spread the chopped walnuts on a baking sheet.

🍪 Make the Cookie Dough
2. Combine the Dry Ingredients
In a medium bowl, whisk together:
- All-purpose flour
- Baking soda
- Salt
- Cinnamon
Set aside.
3. Mix the Butter & Sugars
In a large bowl, whisk the melted butter, granulated sugar, and brown sugar until smooth and glossy.
Add the honey and whisk until well combined.
4. Add the Egg & Vanilla
Whisk in the egg and vanilla extract.
Mix until smooth.
5. Add the Dry Ingredients
Gradually add the flour mixture.
Use a spatula to mix until just combined.
Do not overmix.
The dough should be soft and slightly sticky.
🌰🍫 Add the Baklava Filling
6. Fold in the Walnuts & Chocolate
Reserve about ¼ cup of the walnuts and chocolate chips for topping.
Fold the remaining walnuts and dark chocolate chips into the cookie dough.
Make sure they’re evenly distributed.
❄️ Chill the Dough
7. Refrigerate
Cover the bowl and refrigerate the dough for approximately 30 minutes.
This makes the dough easier to handle and helps prevent excessive spreading during baking.
🔥 Bake the Cookies
8. Portion the Dough
Line two baking sheets with parchment paper.
Scoop the dough into approximately 18–20 portions, using about 2 tablespoons of dough per cookie.
Roll each portion lightly into a ball.
Place them about 2 inches apart on the baking sheets.
9. Add the Topping
Gently press a few reserved walnuts and dark chocolate chips onto the tops of each cookie.
Don’t flatten the cookies too much.
10. Bake
Bake for 10–12 minutes, one tray at a time if possible.
The edges should be golden and set while the centers still look slightly soft.
Don’t overbake.
The cookies will continue to firm as they cool.
🍯 Make the Honey Glaze
11. Warm the Honey
While the cookies bake, combine the honey and water in a small saucepan.
Warm gently over low heat for about 1–2 minutes.
Remove from the heat and stir in the vanilla and cinnamon.
✨ Finish the Cookies
12. Brush With Honey
Allow the cookies to cool on the baking sheet for 5 minutes.
While they’re still warm, lightly brush or drizzle the honey glaze over the tops.
The warm cookies will absorb some of the honey, creating that delicious baklava-style sticky sweetness.
13. Garnish
Finish with:
- Extra chopped walnuts
- A little melted dark chocolate
- A pinch of cinnamon
- Flaky sea salt, if desired
Transfer the cookies to a wire rack and allow them to cool completely.
⭐ Chef’s Tips
Use Dark Chocolate
Dark chocolate balances the sweetness of the honey and gives the cookies a richer flavor.
Toast the Walnuts
Freshly toasted walnuts make a huge difference in both flavor and texture.
Don’t Overbake
The centers should look slightly underdone when you remove the cookies. This keeps them soft and gooey inside.
Chill the Dough
Because of the melted butter and honey, chilling is especially helpful for keeping the cookies thick.
Glaze While Warm
Applying the honey glaze while the cookies are still warm gives them that characteristic sticky baklava finish.
🍫 Delicious Variations
Pistachio Baklava Cookies
Replace half of the walnuts with chopped pistachios.
Orange Chocolate Baklava
Add 1 teaspoon finely grated orange zest to the dough.
Espresso Chocolate
Add 1 teaspoon instant espresso powder to intensify the dark chocolate flavor.
Extra Gooey
Press a few additional chocolate chips into the centers immediately after the cookies come out of the oven.
Chocolate Drizzle
Once cooled, drizzle with melted dark chocolate and sprinkle with chopped walnuts.
Storage
Store completely cooled cookies in an airtight container.
Room temperature: Up to 4 days.
For the best texture, place parchment between layers if the honey glaze remains sticky.
Freezing
Freeze the Dough
Scoop the dough into balls and freeze on a tray until solid.
Transfer to a freezer-safe container and freeze for up to 2 months.
Bake directly from frozen, adding approximately 2–3 minutes to the baking time.
Freeze Baked Cookies
Cool completely, wrap well, and freeze for up to 2 months.
Thaw at room temperature.
