⏱ Recipe Information

Prep Time: 20 minutes
Cook Time: 4–5 hours on HIGH or 6–7 hours on LOW
Total Time: About 6½ hours
Servings: 8–10
Difficulty: Easy
Method: Slow Cooker

Ingredients

Meat Sauce

  • 1½ lb ground beef
  • 2 tablespoons Italian seasoning
  • 24 oz garlic-herb spaghetti sauce
  • 1 cup beef broth

Cheese Filling

  • 2½ cups cottage cheese
  • 1 large egg
  • 1¼ cups shredded mozzarella cheese

Lasagna Layers

  • 12 lasagna noodles, uncooked
  • 1¼ cups shredded mozzarella cheese, reserved for layering and topping

Tip: Regular oven-ready or standard dry lasagna noodles both work. If using standard noodles, there’s no need to boil them first—the liquid from the sauce and broth will cook them in the slow cooker.

Instructions

1. Brown the Ground Beef

Heat a large skillet over medium-high heat.

Add the ground beef and cook for approximately 6–8 minutes, breaking it apart with a wooden spoon, until browned and no longer pink.

Drain excess grease.

Why brown the beef first?

Browning adds much more flavor and prevents the finished lasagna from becoming greasy. It also gives the meat a better texture than adding raw beef directly to the Crockpot.

2. Season the Beef

Return the beef to the skillet if necessary.

Add the Italian seasoning and stir well.

Cook for another 30–60 seconds to allow the herbs to become fragrant.

3. Add the Sauce

Pour in the garlic-herb spaghetti sauce.

Add the beef broth.

Stir everything together until evenly combined.

Remove from the heat.

Prepare the Cheese Filling

4. Combine the Cottage Cheese and Egg

In a medium bowl, add:

  • Cottage cheese
  • 1 large egg
  • 1¼ cups shredded mozzarella

Stir until evenly combined.

The egg helps the cheese layer set as the lasagna cooks, while the mozzarella adds extra richness and cheesiness.

Assemble the Crockpot Lasagna

5. Add the First Layer of Sauce

Lightly grease the inside of a 6-quart slow cooker.

Spread approximately 1½ cups of the meat sauce over the bottom.

Make sure the sauce covers the bottom completely.

6. Add the Noodles

Break the lasagna noodles as necessary so they fit into the Crockpot.

Arrange a layer of noodles over the sauce.

It’s perfectly fine for the noodles to overlap slightly.

7. Add the Cheese

Spread approximately one-third of the cottage cheese mixture over the noodles.

Don’t worry if it doesn’t spread perfectly—the moisture and heat will help everything settle as it cooks.

8. Repeat the Layers

Continue layering:

Meat sauce → noodles → cheese mixture

Repeat until all the ingredients have been used.

Try to finish with a generous layer of meat sauce on top.

This is important because the noodles on the top need enough moisture to cook properly.

Add the Final Cheese

9. Top With Mozzarella

Sprinkle the remaining 1¼ cups mozzarella cheese evenly over the top.

For an extra-cheesy lasagna, you can add a little more mozzarella if desired.

Slow Cook

10. Cover and Cook

Place the lid securely on the Crockpot.

LOW:

Cook for approximately 6–7 hours.

HIGH:

Cook for approximately 4–5 hours.

Avoid lifting the lid repeatedly while cooking because this releases heat and moisture and can significantly increase the cooking time.

11. Check the Noodles

The lasagna is finished when:

  • The noodles are tender.
  • The beef sauce is bubbling around the edges.
  • The cheese is melted.
  • The center is hot throughout.

If the noodles are still firm, cover and continue cooking for another 20–30 minutes.

Rest Before Serving

12. Let the Lasagna Rest

Turn off the Crockpot and allow the lasagna to rest uncovered for approximately 15–20 minutes.

This gives the layers time to firm up slightly, making it much easier to serve.

13. Slice and Serve

Use a large spoon or spatula to scoop portions directly from the Crockpot.

Serve hot with:

  • Garlic bread
  • Green salad
  • Roasted vegetables
  • Steamed broccoli
  • Caesar salad

⭐ Chef’s Tips

Don’t Skip Browning the Beef

It adds significantly more flavor and gives you control over excess grease.

Don’t Add Too Many Noodles

The recipe is designed around 12 noodles. Adding substantially more can result in dry or undercooked pasta.

Keep the Noodles Covered

Any exposed noodle edges can remain hard. Make sure each layer is well coated with sauce.

Don’t Lift the Lid

Slow cookers lose a surprising amount of heat when opened. Keep the lid closed as much as possible.

Let It Rest

That short resting period makes the lasagna easier to serve and allows the cheese layers to set.

🧀 Make It Extra Cheesy

For an even richer lasagna, add:

  • Extra mozzarella
  • Parmesan cheese
  • Provolone
  • Italian cheese blend

Sprinkle Parmesan over the final mozzarella layer before cooking for a delicious golden, savory finish.

🥬 Easy Add-Ins

You can customize the filling with:

Spinach

Add 2 cups chopped fresh spinach to the cheese mixture.

Mushrooms

Sauté sliced mushrooms with the beef before adding the sauce.

Italian Sausage

Replace part of the ground beef with Italian sausage for a richer flavor.

Vegetables

Add finely diced zucchini, bell pepper, or mushrooms to the meat sauce.

Spicy Version

Add red pepper flakes or use hot Italian sausage.

Make-Ahead Instructions

The meat sauce and cheese mixture can be prepared up to 1 day ahead and refrigerated separately.

When ready to cook, assemble the lasagna in the Crockpot and begin cooking.

If the ingredients are very cold, you may need a little additional cooking time.

Storage

Allow leftover lasagna to cool before refrigerating.

Store in an airtight container or cover the Crockpot insert tightly.

Refrigerator: Up to 4 days.

Reheat individual portions in the microwave or oven until hot throughout.

Freezing Instructions

Cool the cooked lasagna completely.

Transfer individual portions to freezer-safe containers.

Freeze for up to 2–3 months.

Thaw overnight in the refrigerator before reheating.

Recipe Summary

This Crockpot Lasagna gives you all the cozy goodness of traditional lasagna with considerably less hands-on work.

Seasoned ground beef and garlic-herb sauce slowly cook with tender noodles and creamy cottage cheese, while layers of mozzarella melt into a wonderfully cheesy finish.

Layer it, cover it, let the Crockpot do the work—and come back to a bubbling, comforting homemade lasagna.
