Ingredients

🍗 Chicken Pakoda

  • 500 g boneless chicken, cut into bite-sized pieces
  • 1 cup (about 100 g) gram flour (besan)
  • 2 tablespoons rice flour or cornflour
  • 1 medium onion, thinly sliced, optional
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon Kashmiri red chili powder
  • ½ teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 1 teaspoon ground cumin
  • ½ teaspoon ground coriander
  • ½ teaspoon black pepper
  • 1 tablespoon lemon juice
  • 1 teaspoon salt, or to taste
  • ½ teaspoon chili flakes, optional
  • 2 tablespoons chopped fresh coriander
  • 1 small green chili, finely chopped, optional
  • 2–4 tablespoons water, as needed
  • Oil, for deep frying

Optional

  • 1 egg for a slightly richer coating
  • ½ teaspoon ajwain (carom seeds)
  • Curry leaves for frying or garnish

Instructions

1. Prepare the Chicken

Place the bite-sized chicken pieces in a large bowl.

Add:

  • Ginger-garlic paste
  • Kashmiri chili powder
  • Turmeric
  • Garam masala
  • Cumin
  • Coriander
  • Black pepper
  • Lemon juice
  • Salt
  • Chili flakes, if using
  • Fresh coriander
  • Green chili

Mix thoroughly until every piece of chicken is well coated.


2. Add the Onion

If using onion, add the thinly sliced onion to the chicken.

Gently mix it through.

The onion adds sweetness and extra texture to the pakoda.


3. Add the Flours

Add the gram flour and rice flour or cornflour.

Mix everything together.

The chicken should become coated in a thick, sticky mixture.

Add water 1 tablespoon at a time, only as needed.

Important:

You don’t want a thin, runny batter.

The flour mixture should cling tightly to the chicken pieces.


Marinate

4. Rest the Mixture

Cover and let the chicken mixture rest for 20–30 minutes.

If the mixture becomes too wet after resting, add another tablespoon of gram flour.

6. Add the Chicken

Take small portions of the coated chicken and carefully drop them into the hot oil.

The pakodas should become:

  • Deep golden brown
  • Crisp on the outside
  • Fully cooked in the center

The exact cooking time depends on the size of the chicken pieces.

For food safety, chicken should reach an internal temperature of 165°F (74°C).


8. Drain

Remove the cooked pakodas using a slotted spoon.

Place them on a wire rack or a plate lined with paper towels.

A wire rack is preferable because it allows excess oil to drain without making the bottoms soggy.

For exceptionally crunchy pakodas, you can use a double-frying method.

After the first fry, let the pakodas rest for 2–3 minutes.

Increase the oil temperature slightly and fry them again for 1–2 minutes, until deeply golden and extra crisp.
