🍓 Strawberry Cookie Dough
- ½ cup (113 g) unsalted butter, softened
- ¾ cup (150 g) granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- ½ teaspoon strawberry extract, optional
- 1¾ cups (220 g) all-purpose flour
- 1 teaspoon baking powder
- ¼ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup (75 g) finely chopped fresh strawberries, patted very dry
- 2–3 drops pink or red food coloring, optional
🍓 Strawberry Crunch Topping — Optional
- ½ cup crushed freeze-dried strawberries
- ½ cup crushed vanilla wafer cookies
- 2 tablespoons melted butter
Instructions
1. Make the Cheesecake Filling
Place the softened cream cheese in a medium bowl.
Beat until smooth and creamy.
Add the powdered sugar and vanilla extract.
Mix until completely smooth.
Important:
The cream cheese should be soft but not warm or runny.
2. Portion the Filling
Line a small baking sheet or plate with parchment paper.
Scoop approximately 1 tablespoon of cheesecake filling for each cookie.
You should have about 16–18 portions.
Place them on the parchment.
Freeze for 30–45 minutes, or until firm.
This makes the filling much easier to wrap inside the cookie dough.
🍓 Make the Strawberry Cookie Dough
3. Combine the Dry Ingredients
In a medium bowl, whisk together:
- Flour
- Baking powder
- Baking soda
- Salt
Set aside.
4. Cream the Butter and Sugar
In a large bowl, beat the softened butter and granulated sugar for approximately 2–3 minutes, until light and creamy.
5. Add the Egg and Flavoring
Beat in the egg, vanilla extract, and strawberry extract if using.
Add a few drops of pink or red food coloring if you’d like a more vibrant strawberry appearance.
Mix until evenly colored.
Combine the Dough
6. Add the Flour
Gradually add the dry ingredients to the butter mixture.
Mix on low speed until just combined.
Don’t overmix.
7. Add the Strawberries
Gently fold in the finely chopped strawberries.
Pat the strawberries very dry before adding them.
Why?
Fresh strawberries contain a lot of water. Excess moisture can make the cookie dough too wet and cause the cookies to spread.
Stuff the Cookies
8. Portion the Dough
Scoop approximately 2 tablespoons of cookie dough for each cookie.
Flatten one portion gently in your palm.
9. Add the Cheesecake Center
Place one frozen cheesecake filling portion in the center.
Carefully bring the dough up around the filling.
Pinch the edges together completely so the cheesecake filling is enclosed.
Roll gently between your palms to form a smooth ball.
Repeat with the remaining dough and filling.
Chill
10. Refrigerate the Stuffed Cookies
Place the stuffed cookie dough balls on a parchment-lined baking sheet.
Refrigerate for approximately 20–30 minutes.
This helps the cookies hold their shape while baking.
Bake
11. Preheat the Oven
Preheat your oven to:
350°F (175°C).
Line a baking sheet with parchment paper.
12. Bake the Cookies
Arrange the chilled cookie dough balls on the baking sheet, leaving approximately 2 inches between each cookie.
Bake for 12–15 minutes.
The edges should look set while the centers remain slightly soft.
Don’t wait for the cookies to become deeply golden.
Cool
13. Let Them Set
Allow the cookies to cool on the baking sheet for 10 minutes.
The centers will continue to set as they cool.
Transfer them carefully to a wire rack.
🍓 Optional Strawberry Crunch
14. Prepare the Topping
Combine the crushed freeze-dried strawberries, crushed vanilla wafers, and melted butter.
Mix until the crumbs are evenly coated.
Once the cookies have cooled, you can lightly brush the tops with a little melted white chocolate and press them into the strawberry crunch mixture.
Alternatively, simply sprinkle the topping over the cookies.
Serve
These cookies are especially delicious slightly chilled or at cool room temperature, when the cheesecake center is creamy but firm.
For an extra dessert-like presentation, drizzle with melted white chocolate.
⭐ Chef’s Tips
Freeze the Filling
This is the most important step for easy assembly. Firm cheesecake filling is much easier to enclose in the dough.
Seal Completely
Make sure there are no gaps in the cookie dough around the cheesecake filling, or it may leak during baking.
Dry the Strawberries
Pat chopped strawberries thoroughly with paper towels before adding them.
Don’t Overbake
The cookies should remain soft. They will firm up as they cool.
Chill Before Baking
Cold stuffed dough spreads less and helps keep the cheesecake center contained.
Use Full-Fat Cream Cheese
Full-fat cream cheese provides the best texture and stability for the filling.
🍓 Variations
White Chocolate Strawberry
Fold ½ cup white chocolate chips into the cookie dough.
Strawberry Lemon Cheesecake
Add 1 teaspoon finely grated lemon zest to the cookie dough.
Strawberry Crunch
Use the optional freeze-dried strawberry and vanilla wafer topping for a nostalgic strawberry-crunch flavor.
Chocolate-Dipped
Dip half of each cooled cookie in melted white or milk chocolate.
Raspberry Cheesecake Cookies
Replace the strawberries with finely chopped raspberries, making sure to remove excess moisture.
Storage
Because these cookies contain a cream cheese center, store them in an airtight container in the refrigerator.
Refrigerator: Up to 4 days.
Allow them to sit at room temperature for about 10–15 minutes before serving.
Freezing
Freeze fully baked and cooled cookies in a freezer-safe container, separating layers with parchment paper.
Freeze for up to 2 months.
Thaw overnight in the refrigerator.
