🛒 Ingredients

🍪 Crumb Crust & Topping

  • 2 cups (250 g) all-purpose flour
  • ¾ cup (150 g) granulated sugar
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ¾ cup (170 g) unsalted butter, melted
  • 1 large egg yolk
  • 1 teaspoon vanilla extract

🍋 Lemon Filling

  • 2 large eggs
  • 1 can (14 oz / 397 g) sweetened condensed milk
  • ½ cup (120 ml) fresh lemon juice
  • 1 tablespoon finely grated lemon zest
  • ½ teaspoon vanilla extract

Optional Finish

  • Powdered sugar
  • Thin lemon slices
  • Extra lemon zest

Instructions

1. Prepare the Pan

Preheat your oven to 350°F (175°C).

Line an 8×8-inch or 9×9-inch baking pan with parchment paper, leaving some overhang on the sides for easy removal.

Lightly grease the parchment.

🍪 Make the Crumb Mixture

2. Combine the Dry Ingredients

In a large bowl, whisk together:

  • Flour
  • Sugar
  • Baking powder
  • Salt

3. Add the Butter

Pour in the melted butter.

Add the egg yolk and vanilla.

Mix with a fork or your fingertips until the mixture resembles moist, coarse crumbs.

🥧 Form the Crust

4. Press in the Bottom Layer

Set aside approximately 1 cup of the crumb mixture for the topping.

Press the remaining crumbs firmly and evenly into the bottom of the prepared pan.

Bake for 10 minutes.

The crust should be lightly set but not deeply browned.

🍋 Make the Lemon Filling

5. Whisk the Eggs

In a clean bowl, whisk the eggs until smooth.

Add the sweetened condensed milk and whisk until combined.

6. Add the Lemon

Whisk in:

  • Fresh lemon juice
  • Lemon zest
  • Vanilla

Continue whisking until the filling is smooth and glossy.

🍋 Pour & Top

7. Add the Filling

Pour the lemon mixture evenly over the warm crust.

8. Add the Crumb Topping

Scatter the reserved crumb mixture evenly over the lemon filling.

Don’t press it down—the crumbs should sit lightly on top.

🔥 Bake

9. Bake Until Set

Return the pan to the oven.

Bake for approximately 25–30 minutes, or until:

  • The crumb topping is lightly golden.
  • The lemon filling is set around the edges.
  • The center has only a very slight jiggle.

Avoid overbaking, which can make the lemon layer less creamy.

❄️ Cool & Chill

10. Cool Completely

Place the pan on a wire rack and let the bars cool completely.

Then refrigerate for at least 1–2 hours.

For the cleanest slices and firmest filling, chilling overnight is even better.

🔪 Slice

11. Cut Into Bars

Use the parchment overhang to lift the chilled dessert from the pan.

Cut into 16 squares or bars with a sharp knife.

For especially clean cuts, wipe the knife between slices.

✨ Finish & Serve

Dust lightly with powdered sugar just before serving.

Add a little fresh lemon zest for extra color and aroma.

Serve chilled or slightly cool.

⭐ Chef’s Tips

Use Fresh Lemon Juice

Freshly squeezed lemon juice gives the filling a much brighter flavor than bottled juice.

Zest Before Juicing

It’s much easier to zest a whole lemon before cutting and squeezing it.

Chill Thoroughly

The lemon layer continues to set as it cools, so don’t rush the chilling step.

Don’t Overbake

The center should have a slight jiggle when the bars come out of the oven.

For Extra-Crisp Crumbs

Bake the finished bars for an additional 2–3 minutes if you prefer a more golden, crunchy topping.

🍋 Delicious Variations

Blueberry Lemon Crumb Bars

Scatter ½ cup fresh blueberries over the crust before pouring in the lemon filling.

Raspberry Lemon

Add ½ cup fresh raspberries for a gorgeous sweet-tart combination.

Coconut Lemon

Add ½ cup shredded sweetened coconut to the crumb mixture.

Meyer Lemon Bars

Use Meyer lemons for a naturally sweeter, more floral citrus flavor.

White Chocolate Lemon

Add ½ cup white chocolate chips to the crumb topping.

Storage

Store the bars in an airtight container in the refrigerator.

Refrigerator: Up to 5 days.

Keep chilled until ready to serve.

❄️ Freezing

Place completely chilled bars in a freezer-safe container with parchment between layers.

Freeze for up to 2 months.

Thaw overnight in the refrigerator and dust with powdered sugar just before serving.
