Cook Time: 15 minutes
Total Time: About 25 minutes
Servings: 4
Difficulty: Easy
Ingredients
For the Ravioli
- 1 tablespoon olive oil
- 2 cups cherry tomatoes, halved
- 3 cloves garlic, chopped
- 1 lb (450 g) fresh or refrigerated ravioli
- 1½ cups asparagus, trimmed and cut into 1-inch pieces
- ½ teaspoon salt, plus more for the pasta water
- ¼ teaspoon black pepper
- ½ teaspoon Italian seasoning
- ¼ teaspoon red pepper flakes, optional
- 2 tablespoons fresh basil, chopped
- 1 tablespoon fresh parsley, chopped
- ½ cup finely grated Parmesan cheese
- ½ cup reserved pasta water
- 1 tablespoon butter, optional
- Fresh lemon juice, to taste
Instructions
1. Prepare the Ingredients
Wash and halve the cherry tomatoes.
Trim the woody ends from the asparagus and cut the spears into bite-sized pieces.
Chop the garlic and fresh herbs.
Set everything aside.
2. Cook the Ravioli
Bring a large pot of generously salted water to a boil.
Add the ravioli and cook according to the package directions, usually 3–5 minutes for fresh ravioli.
During the final 2 minutes of cooking, add the chopped asparagus to the same pot.
Cook until the ravioli is tender and the asparagus is bright green and just tender.
Tip:
Don’t overcook the asparagus—it should retain a slight bite.
Before draining, reserve ½ cup of pasta water.
Drain the ravioli and asparagus gently.
3. Sauté the Tomatoes
While the ravioli cooks, heat 1 tablespoon olive oil in a large skillet over medium heat.
Add the halved cherry tomatoes.
Season lightly with salt and black pepper.
Cook for approximately 4–5 minutes, stirring occasionally.
The tomatoes should begin to soften and release their juices.
4. Add the Garlic
Add the chopped garlic to the skillet.
Cook for 30–60 seconds, stirring constantly, until fragrant.
Be careful not to brown or burn the garlic.
Add the Italian seasoning and red pepper flakes, if using.
5. Create the Sauce
Add approximately ¼ cup reserved pasta water to the skillet.
Stir and gently scrape the bottom of the pan.
The tomato juices, olive oil, garlic, and pasta water will come together to create a light, silky sauce.
Add the butter if using and stir until melted.
6. Add the Ravioli & Asparagus
Carefully add the cooked ravioli and asparagus to the skillet.
Gently toss everything together so the ravioli becomes coated in the tomato-garlic sauce.
If the sauce seems too thick, add more pasta water a tablespoon at a time.
Cook together for 1–2 minutes.
7. Add the Herbs & Parmesan
Remove the skillet from the heat.
Add the fresh basil, parsley, and Parmesan.
Toss gently.
Finish with a small squeeze of fresh lemon juice to brighten the flavors.
Taste and adjust the salt and pepper.
🍅 Serve
Divide the ravioli among four bowls.
Top with:
- Extra Parmesan
- Fresh basil
- Freshly cracked black pepper
- A drizzle of olive oil
- A pinch of red pepper flakes, if desired
Serve immediately while hot.
⭐ Chef’s Tips
Don’t Overcook the Ravioli
Ravioli can become fragile and burst if cooked too long. Follow the package directions and handle it gently.
Reserve Pasta Water
The starchy water is the secret to turning the tomato juices and olive oil into a silky sauce.
Let the Tomatoes Soften
Cooking them until they begin to burst creates a naturally sweet, flavorful sauce.
Add Parmesan Off the Heat
This helps the cheese melt smoothly without becoming clumpy.
Use Fresh Herbs
Basil and parsley give the dish a fresh finish that dried herbs can’t quite replicate.
🌿 Variations
Creamy Ravioli
Add ¼ cup heavy cream to the skillet along with the pasta water for a richer sauce.
Lemon Garlic Ravioli
Increase the lemon juice and add 1 teaspoon lemon zest.
Spinach Ravioli
Add 2 cups baby spinach during the final minute of cooking.
Chicken Ravioli
Add sliced grilled or roasted chicken for extra protein.
Shrimp Ravioli
Sauté ½ lb peeled shrimp with the garlic before adding the tomatoes.
Extra Vegetable
Add zucchini, bell peppers, mushrooms, or baby spinach.
Storage
Transfer leftovers to an airtight container and refrigerate for up to 3 days.
Reheat gently in a skillet over medium-low heat with a splash of water or broth.
Avoid overheating, as ravioli can become tough.
