🍅 Homemade Ketchup

🍅 Homemade Ketchup

Rich, tangy, naturally sweet, and wonderfully tomato-forward, this homemade ketchup is a simple pantry-friendly alternative to store-bought ketchup. Whole peeled tomatoes are simmered with vinegar, honey, garlic, onion, and black pepper until thick and flavorful.

Perfect with burgers, fries, meatloaf, sandwiches, grilled foods, chicken tenders, and roasted potatoes.

⏱ Recipe Information

Prep Time: 5 minutes
Cook Time: 35–45 minutes
Total Time: About 50 minutes
Yield: Approximately 1½ cups
Difficulty: Easy

Ingredients

  • 1 can (14.5 oz / 411 g) whole peeled tomatoes, preferably with juices
  • ¼ cup (60 ml) white vinegar
  • ¼ cup (85 g) honey
  • ½ teaspoon whole black peppercorns
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ½ teaspoon sea salt

Instructions

1. Prepare the Tomatoes

Pour the whole peeled tomatoes and their juices into a medium saucepan.

Use a wooden spoon or potato masher to crush the tomatoes into smaller pieces.

You don’t need to puree them yet.

2. Add the Seasonings

Add:

  • White vinegar
  • Honey
  • Black peppercorns
  • Onion powder
  • Garlic powder
  • Sea salt

Stir everything together.

Simmer

3. Cook the Mixture

Place the saucepan over medium heat.

Bring the mixture to a gentle simmer.

Once simmering, reduce the heat to medium-low.

Cook uncovered for approximately 30–40 minutes, stirring occasionally.

The mixture should reduce considerably and become thick and concentrated.

Tip:

Keep an eye on the bottom of the pan toward the end of cooking. As the ketchup thickens, it can scorch more easily.

Blend

4. Remove the Peppercorns

If possible, pick out the whole black peppercorns.

Don’t worry if you miss a few—they can be strained out in the next step.

5. Blend Until Smooth

Transfer the cooked tomato mixture to a blender or food processor.

Blend until completely smooth.

For an ultra-smooth ketchup:

Pass the blended mixture through a fine-mesh sieve.

Use the back of a spoon or spatula to press the ketchup through.

This removes tomato seeds, skins, and any remaining pepper pieces.

Thicken

6. Return to the Saucepan

Pour the smooth ketchup back into the saucepan.

Cook over low heat for another 5–10 minutes, stirring frequently.

The finished ketchup should be thick enough to sit on a spoon rather than run like tomato sauce.

Remember that it will thicken slightly more as it cools.

Taste and Adjust

7. Balance the Flavor

Taste the ketchup once it’s slightly cooled.

Adjust if needed:

  • More vinegar for extra tang
  • More honey for sweetness
  • More salt for seasoning
  • A pinch of garlic powder for stronger savory flavor

Make adjustments gradually.

Cool and Store

8. Cool Completely

Transfer the ketchup to a clean jar or airtight container.

Allow it to cool completely before sealing and refrigerating.

The flavor will actually become more balanced after chilling.

⭐ Chef’s Tips

Reduce Until Thick

The biggest secret to good homemade ketchup is concentration. If the mixture is too watery, keep simmering.

Blend Thoroughly

A high-speed blender gives the smoothest texture.

Strain for Restaurant-Style Ketchup

Straining takes an extra minute but produces an exceptionally silky ketchup.

Don’t Rush the Reduction

Keep the heat moderate. High heat can cause the tomato mixture to splatter and scorch.

Taste After Cooling

Hot ketchup can taste sharper and thinner than it will once chilled.

🌶️ Easy Variations

Spicy Ketchup

Add ¼–½ teaspoon cayenne pepper or a few dashes of hot sauce.

Smoky Ketchup

Add ½ teaspoon smoked paprika.

Garlic Ketchup

Increase the garlic powder to ¾ teaspoon.

Curry Ketchup

Add ½ teaspoon curry powder for a German-style curry ketchup variation.

Maple Ketchup

Replace some or all of the honey with maple syrup.

Brown Sugar Ketchup

Replace the honey with brown sugar for a deeper caramel-like sweetness.

Storage

Because this is a homemade, non-canned ketchup, keep it refrigerated.

Store in a clean, airtight container in the refrigerator for approximately 1–2 weeks.

Always use a clean spoon when serving.

Important:

This recipe is not formulated or tested for shelf-stable canning. Don’t store it at room temperature or attempt to can it using ordinary water-bath methods.

🍅 Recipe Summary

This Homemade Ketchup is wonderfully simple: whole tomatoes are slowly reduced with white vinegar, honey, garlic, onion, salt, and black pepper until thick, smooth, tangy, and naturally sweet.

It’s a fantastic way to make a fresher-tasting ketchup with ingredients you can recognize.

Once you taste homemade ketchup on crispy fries or a juicy burger, the bottle from the store may never taste quite the same!
